Additionally, due to environmental conditions, contamination is possible in raw materials and processed products during the production stage. As seen, metals easily enter the food chain, leading to accumulations in living organisms.

When evaluating food for safety and quality, the amount of metals it contains holds significant importance. Exceeding certain levels of metals can lead to adverse health effects. For this reason, legal restrictions have been established regarding the determination of the amounts of metals such as lead, cadmium, mercury, arsenic, as well as iron, copper, zinc, magnesium, manganese, potassium, and sodium in foods. Excessive accumulation of heavy metals can lead to serious illnesses such as cancer, liver, and kidney failure.
